In April, in her column in the Chronicle Herald, Cindy Day, a fan of pure Nova Scotia maple syrup, shared a series of maple-infused recipes that were submitted to her from all over Atlantic Canada. As proud partners, we provided a delicious gift box of goodies for her to gift away. In return we all get to enjoy these wonderful ideas - mapleicious ways to enjoy Acadian Maple, and of course maple from the many other maple harvesters here in Nova Scotia.
Here's one from Christine Morton
MAPLE SYRUP COOKIES
- 1/2 cup shortening
- 1 cup brown sugar
- 1 egg
- 1/2 cup real maple syrup (100% pure Nova Scotia Maple!)
- 1/2 teas. vanilla
- 1 1/2 cup all purpose flour
- 2 tsp baking powder
- 1/2 teas salt
- 1 cup flaked coconut
Preheat oven to 375 degrees
Cream shortening and brown sugar until fluffy. Beat in egg, syrup and vanilla.
Mix well
Add flour, baking powder and salt and stir in mixture, add coconut.
Drop by spoonfuls 2 inches apart.
Baking time 10 - 12 minutes
These are delicious and kids will love them.
